Thinking Outside the Box

Jo here. Just a quick post to share our supper last night ... it was REALLY good. Sometimes I'll get puff pastry dough; it's so fun to create with it, and it can make a quick, fun meal [or dessert or breakfast] in a pinch. It's not the most healthy thing in the world, but the kind I get does have decent ingredients, so I think it's ok to indulge on occasion. ;)

Last night was one such occasion. I usually make homemade sourdough pizza for the meal on Friday evening, however I was missing some ingredients [my shopping has been really hit-and-miss lately and it's been a few months since I've been to Aldi]. PUFF PASTRY TO THE RESCUE! Yes, I could have made this on my sourdough pizza dough, but because this was a very untraditional pizza, puff pastry seemed perfect for the job.

Base sauce: 4oz of cream cheese mixed with 1/4c alfredo sauce and a few good squirts of ketchup ... all organic, of course ;) Once it was creamy, I added in a good dose of oregano.
Toppings: Applegate Farm's Uncured Turkey Pepperoni [THE BEST!], homemade turkey sausage crumbles, and on my portion I added mushrooms and black olives.
Cheese: I had a little bit of shredded smoked gouda left - it was threatening to get moldy a few months ago, so I shredded the remaining and put it in a place in the freezer where it would not get lost. Like, it was literally staring me in the face every time I opened the freezer door.
On Top of it All: A good sprinkle of Italian seasonings.

YUMMMMMMMMMMMMM! Probably the best untraditional pizza I've ever made! And as you can see in the picture, I just used the puff pastry as the base; I did not fold it over into a pocket like I would if I had put in cinnamon apples or something.

This is the puff pastry I use; it's called "Wewalka" and can usually be found by the canned "pop" biscuits at Stuff Mart. I PREFER using Trader Joe's brand, however I'm only at a Trader Joe's whenever I'm traveling. TJ's keeps theirs in the freezer section; it's in a box with TWO puff pastries.

And here's the turkey pepperoni I mentioned. It can be found at health food stores, however some regular supermarkets sell it, too.

Have a great day!!
Love to all, j
