What DO you eat?

Hello family and friends! As quite a few of you already know I was diagnosed with AlphaGal back in June (along with struggling with some sort of histamine intolerance and an autoimmune disorder)… For those of you that don’t know, alpha gal is a tickborne illness. The nutshell version is a tick will bite a mammal and ingest a specific carbohydrate called alpha galactose and then the tick will then go on to bite you and insert some of that alpha galactose into your system. Your body will then build up an allergic response to it. Which then creates an allergy to all mammal products. People have varying degrees of severity with this, mine can get pretty severe, including anaphylactic shock (and all the health struggles that come with that) extreme fatigue, digestive issues, anxiety, etc etc… along with not being able to eat any mammal, I’m also allergic to couple of kinds of fish and also chicken and turkey (and hops, but yuck anyways!) Besides having several vegetables and fruits and greens that my digestive track has a hard time with.  So it’s been a struggle trying to figure out what to eat to stay nourished… Last two months I’ve taken pictures of the nicest meals that I have been eating for those of you who are interested or maybe possibly need some inspiration yourself. Don’t let these photos fool you! Right now I’m only getting one good meal a day if that… But it’s a journey I’m on and I feel like there will be a day where I will be more used to this and it will be a lot easier to feed myself. I found an excellent source for emu and duck meat which I don’t seem to have a problem with… So I’m thankful for that. (Although, I’ve been really struggling with some stuff recently so I’m going to eliminate Emu for several days and see if I improve.)

Anyways, enjoy the photos and the inspiration. This is with only a limited selection of proteins, vegetables, white rice, potatoes, fake butter, oil and salt.
