This is Molly. :) It's been a long time since I've posted.... I have several posts "in the works". It's just taking a long time to get them done! 😅
But I wanted to share a neat recipe I came up with, that is super easy!
Have you ever had kimchi? It's like a spicy, slightly sweet, Korean version of sauerkraut. I really, really like it! 😃 But it can get expensive if you buy it very often, and it can feel a bit overwhelming to try to make at home.
Then I had the idea of making some kind of spicy sauce to put on homemade sauerkraut, to make it taste like kimchi.
After doing a little research, here is what I came up with. Tylor and I really enjoyed it the first time I made it, so I thought I'd document the process this time!
We ate it on sauerkraut, and also used it as a sauce for a lot of other dishes! It's really good on rice too. :)
Kimchi Sauce
*half a dried cayenne pepper
*roughly 2 Tbsp ginger root
*about 3 cloves garlic
*half an onion
*liquid aminos and/or soy sauce, around 1/2 c total
*2 Tbsp apple cider vinegar
*1 Tbsp sucanat (or other sweetener)
*optional: something "fishy", I used kelp powder, most real kimchi recipes call for oyster sauce, shrimp, or anchovies
*also optional, a small amount of sesame oil.
Blend well in blender, transfer to jar, and enjoy! :) this makes about 1 cup.
Ingredients needed.
Kikkoman soy sauce, about 1/3 c.
Bragg's aminos, about 2 Tbsp.
Apple cider vinegar, about 2 Tbsp.
1 Tbsp sucanat.
Small amount of kelp powder.
About 1.5 Tbsp sesame oil.
